Prioritising your health and nutrition shouldn't mean you have to sacrifice your favourite treats. Thanks to our incredible ASN Athlete, Jen Corfield, you can now enjoy everything you love most about Anzac biscuits, without any of the guilt. Just more protein and fibre, with the same amount of deliciousness as before!


2 scoops of Evolve Vegan Protein (we used Vanilla Salted Caramel)

1 cup rolled oats

1 cup almond meal

1 cup dessicated coconut

1 tsp baking powder

1/2 cup peanut butter or nut butter of choice

1/2 cup of golden syrup

1/2 cup of coconut oil


  1. Mix all ingredients together in a bowl
  2. Once evenly mixed, roll the dough into evenly sized balls and place on a tray lined with baking paper
  3. Once cookies are evenly rolled and placed on the tray (with enough room between them to spread and rise), press down gently on the cookies with a fork or spatula to slightly flatten the cookies
  4. Bake cookies on 180 degrees for approximately 7 minutes
  5. Enjoy with a cuppa!
