White Chocolate & Blueberry Vegan Protein Scones

Running out of ideas to spoil your mum for Mother's Day? Our incredible Ambassador, Jen, has got you covered. Treat mum to breakfast in bed or an at-home high tea brunch with our White Chocolate & Blueberry Vegan Protein Scones! 

Ingredients

  • 2 ½ cups of Self Raising Flour
  • 1 scoop of Evolve Vegan Protein in Vanilla Salted Caramel flavour
  • ¼ cup Honey
  • ½ cup Coconut Oil
  • 1 cup Almond Milk
  • ½ cup of Frozen Blueberries
  • ½ cup Vegan White Chocolate or Noshu White Chocolate Chips 
  • Coconut Cream

Chia Jam Ingredients:

  • 4 cups frozen blueberries 
  • 1/4 cup chia seeds 
  • 2 tablespoons honey

Method:

  1. Place the coconut cream in the fridge overnight. 
  2. Preheat oven to 180 degrees. 
  3. In a bowl, mix flour, protein, coconut oil, honey and milk.
  4. Mix and knead the dough. 
  5. Fold in the blueberries and chocolate. 
  6. Divide the dough into scone shapes and place them on a lined tray. 
  7. Bake in the oven for 15-20 minutes. 
  8. For the Coconut whip - Take the coconut cream out of the fridge and scoop the cream off the top. Mix this with honey and whip the two ingredients. 
  9. Serve with Chia Jam on top (recipe below).
  10. Enjoy with your Mum this Mother’s Day! 

Chia Jam Recipe: 

  1. In a saucepan, add blueberries and bring to the boil. 
  2. Reduce to simmer for 10 minutes. 
  3. Using a potato masher, mash up the blueberries to a consistency that you like (either smooth or lumpy). 
  4. Add in honey, to suit your desired sweetness. 
  5. Stir in your chia seeds and mix well. 
  6. Store in jars or containers.
